What does "Trocken" mean on a German label?

Trocken simply means "dry." While many people associate German wine with sweetness, the majority of modern German production is focused on dry wines that feature high acidity and intense fruit flavors without the residual sugar.




What is the difference between Kabinett, Spätlese, and Auslese?

These terms refer to the ripeness of the grapes at harvest. Kabinett is the lightest and highest in acidity; Spätlese (late harvest) is riper and fuller; Auslese (select harvest) is made from very ripe clusters and often has a touch of sweetness. Note: these can be dry (Trocken) or sweet.




What food pairs best with German Riesling?
