The grapes used for Il Favot come from vineyards which, due to periodic planting, have a maximum age of 15 years. The maceration of the skins is limited to 6-8 days in order to extract few tannins present from the skins and as many coloring substances as possible from them, so that the wine has a good color and notable softness.
