Dewatsuru Plume is a traditional Kimoto Junmai saké from Akita Prefecture, made with Ginsan rice polished to 65%. The traditional Kimoto production method, which involves a labor-intensive process of hand-mashing the rice, water, and koji to create a robust fermentation starter, contributes to its complex and layered profile. With an ABV of 14.8%, this saké offers warming notes of chestnut, applesauce, and white pepper. Its robust flavors complement comforting dishes like fish & chips, chicken shawarma, or quinoa salad with almonds.
