Doña Paula is a winery that produces premium wines, established in 1997 in Mendoza, Argentina. We own 100% of the vineyards used for the production of all our wines, planted in the best areas of the country, looking for the most faithful expression of each terroir. THE TERROIR EFFECT The wines in our Altitude Series line are the result of the combination and use of four key factors: soil, elevation, field management and varietal. The search for the varietals that grow best in each part of the vineyard, taking into account the soil and the altitude, in combination with the management of the fields and the oenological decisions that allow us to express, in these high-altitude wines, the terroir effect. VINIFICATION The harvest begins in the first week of April with the Syrah variety, followed by the Malbec in the middle of the same month, and ends with the Cabernet Sauvignon at the end of April. The harvest is carried out manually and the grapes are destemmed without breaking the grains. A cold maceration is then carried out separately for each variety in stainless steel tanks to extract the primary aromas. At the end of the alcoholic fermentation, the wine is blended and aged in French oak barrels, 20% of which are new, for 14 to 16 months. El Cepillo is an IG located in San Carlos, Valle de Uco, known for the exceptional quality of its Malbec. Before planting Los Indios vineyard in 2006, we conducted a regional survey of the grape varieties grown in the area, and we identified the best performing varieties. Among them, we discovered an old Syrah vineyard that amazed us with the quality and character of its wine which led us to plant more Syrah vines. Since the introduction of our 1100 label, Syrah has been the backbone that gives elegance and complexity to the blend, while Malbec adds fruity notes and volume to the palate.
