Venification: Skin contact, spontaneous fermentation with wild yeast. Aging: 6-month aging on lees in stainless steel tank with monthly bâtonnage. Residual sugar: Less than 2 g/l. Nose: Candied citrus peel, apricots, white peaches, floral notes of honeysuckle, minerality. Taste: Fresh citrus, crisp apple, mineral notes, balanced acidity, structured long and lingering finish.
