What is the Kimoto Method?

Unlike modern methods that use lab-created liquid lactic acid, the ancient Kimoto style requires brewers to manually pole-mash rice, water, and koji into a paste. This open-air process invites native, ambient lactic acid bacteria into the brew, developing a robust yeast starter that adds incredible complexity, natural acidity, and deep structure.
