An ancestral masterpiece reborn in glass. Kodaimai Crimson is a genuinely rare expression hailing from Japan's famed Niigata Prefecture. Brewed using Kodaimai—an ancient, heirloom variety of wild purple rice—and crafted via the painstaking Kimoto method, this pure rice (Junmai) sake stands completely apart from the modern crowd.
Tasting Note: Thanks to the artisanal hand-mashed fermentation starter, this bottle reveals a profoundly layered texture balanced by an accessible, elegant 12.5% ABV. Instead of typical melon tones, expect an enchanting crimson-tinged profile bursting with notes of fresh hibiscus, tart acerola cherry, and wild blackberry, resolving in a structured, crisp finish.

Because of its vivid acidity and bright red-fruit character, this sake steps effortlessly out of the sushi bar. It behaves beautifully alongside rich, savory proteins like barbequed wild salmon, roasted duck breast, or holiday turkey with cranberry sauce. It is also an absolute standout pairing next to a crisp, tangy Waldorf salad.
Unlike modern methods that use lab-created liquid lactic acid, the ancient Kimoto style requires brewers to manually pole-mash rice, water, and koji into a paste. This open-air process invites native, ambient lactic acid bacteria into the brew, developing a robust yeast starter that adds incredible complexity, natural acidity, and deep structure.
