Prugnolo Gentile is the variant strain of Sangiovese in and around Montepulciano and is the majority of the blend for this rosso. As traditional and required by law, it must be at least 70% of the blend.
Spontaneous fermentation without addition of yeasts, pumping over twice a day during fermentation. Maceration lasts around 8-10 days. Vinified in glass lined cement and steel tanks. Aging in Slavonian and French oak barrels of various capacities (18-20-25-30 hectoliters) for 12 months.
