What makes a bourbon "wheated"?
To be a bourbon, the mash bill must be at least 51% corn. In a Wheated Bourbon, the remaining portion of the recipe uses wheat as the primary flavoring grain instead of the traditional rye. This removes the "spicy" kick and replaces it with a softer sweetness.
Is wheated bourbon sweeter than regular bourbon?
Yes, generally. Without the peppery spice of rye to balance the corn, the natural caramel, vanilla, and honey notes of the bourbon become more prominent. It often tastes like "liquid bread" or crème brûlée.
Why is Weller so hard to find?
Weller is produced at the Buffalo Trace Distillery using the same wheated mash bill as Pappy Van Winkle. Because it shares this "DNA" but is sold at a more accessible price point, it has become one of the most highly allocated and hunted bourbons in the world.
